Stacey's Stuffed Bell Peppers

Ingredients:

1 lb ground meat
4 bell peppers
1 onion
1 cup or so of Italian breadcrumbs
About a cup of Grated parmesan cheese or however much you like

Cut tops off of bell peppers and clean out seeds. Brown ground meat and onions with some Tony's.
Mix breadcrumbs and cheese with meat. Stuff bell peppers and top them with the breadcrumbs and cheese.
Set bell peppers in baking pan filled about half way with water to steam them. Cover with aluminum foil and bake
at 350-375 for about an hour or until peppers become soft. You can make some rice on the side to eat
with the bell pepper.
 

Variation

You can use the same mixture with Eggplant. Cut up the eggplant in chunks and cook down,
then mix with meat mixture and put in baking pan and bake. Serve over rice.
